This recipe is from the Better Homes and Gardens Homemade Cookies cookbook. It is a guaranteed crowd pleaser and just way too hard to have only one!
Prep: 15 minutes Bake: 20-25 min Oven: 325 Makes: 30
2 2/3 cups flaked coconut
2/3 cup granulated sugar
1/3 cup all-purpose flour
¼ teaspoon salt
4 egg whites
½ teaspoon almond extract
2 ounces semisweet chocolate (optional)
½ teaspoon shortening (optional)
- Lighly grease and flour a large cookie sheet; set aside. In a medium bowl combine coconut, sugar, flour, and salt. Stir in egg whites and almond extract.
- Drop egg white mixture by rounded teaspoons 2 inches apart onto prepared cookie sheet.
- Bake in a 325 oven for 20-25 minutes or until edges are golden brown. Transfer cookies to a wire rack; cool completely. If desired, in a heavy small saucepan melt chocolate and shortening; drizzle over cooled cookies.
